i was awakened not by the alarm clock this morn but a cramp on my right calf. my back's been stiff the whole day.
today, we made a few items out of puff pastry. firstly, it's the vol au vents. vol au vents are made from puff pastry, shaped like a little barrel. bake that blind (juz the pastry on its own) andwhen it's cooked and cooled, throw in the filling. we had chicken vol au vants.it's nice. then we made salmon en croute. we use canned salmon and drain off the water or brine. then we fry in onion and parsley plus salt and pepper. i dun like salmon but that was nice. by en croute, we mean encase so basically salmon is wrapped in the puff pastry, almost similar to that of sausage rolls.
beef bourguignon pie was next on the list. it's juz beef pies. could have been more salty. but chef said it's nice. oh, u know i made the puffs yesterday and put it int he fridge and this morn when i went in to get my puff, someone had taken it!!!! shit!!! i wa ssooooooooo mad. also gott blame myslef for forgetting to write my name. i didn't know that they'll shift all our stuff in the fridge. i'm sure my puff will turn out well coz the vol au vents rose up high.
anyway, continued to make apple turnovers. never try it coz i was sick of puff pastry plus was really tired. but it looked good. pithiviers (pronounced as pativiers), lemm ethink wat they are.... i forgot wat they are coz we made so many puff stuff today. still got two more tiems to go. oh.....okok, saw the pics i draw on my notes..it's like flying saucer. two pieces of puffs with filling in between. the filling was frangipane, an almond paste. dunno wat that tastes like too.
cream horns were also made. they are coned shaped puffs so after we baked it, we put cream and jam....yum yum....am gonna be tested on this i think. and finally, palmiers...sthg like sugar puff sticks but u can make heart or butterfly shapes with it. i didn't put enugg sugar so not very nice.
we made all these stuff today. from 8am onwards. rushed and rushed. it's crazy. i dun udnerstand why LCB doesn't give us a class on monday whenever we have theory classes on thursdays. for the cuisine class, they've got lessons from mon to wed, and that's practical lessons followed by a theory one on thursday. without a monday class, have to do 3 different items each lesson!!!!
all of us look so exhausted this morning coz we had a gd workout with the puff pastries yesterday. the chef did litle demo today so we did msot of the work on our own.
ok, my eyes can hardly open. am gonna sleep soon. nite nite.
