It’s been an amazing day for me again! Went to attend a church service in Auntie Margaret’s house this morning. Well I did that out of courtesy. But I dun think I wanna attend another service. No offence to all the Christians out there. although the service lasted only about one hour, I was not that comfortable. The people there were nice especially Margaret’s family. Had a good lunch there though.

Margaret lives in St. Ives. It’s another suburb further from where I stay now. About half hour’s drive. It’s a nice little suburb. Green and serene. If I’ve a chance to migrate here, I’ll consider living there. further from there is the beach. Excellent living conditions for me n my family.

Ok, today was a day of great n good food. paul n helen had two guests here for dinner. So we had a few courses, starting with a soup made out of chicken stock with my dumplings. Then we had a noodle salad and a few other items. All of them were ver very nice. And they ended off with 2 desserts with many compliments by laurel tan.

One of them was the poached pear tart I made in sch. Then the other one, I baked a puff pastry on its own n didn’t know wat to do it. so I decided to spread some of the cream custard I made in sch over the puff and then I poached some green apples in apple juice, lemon n cinnamon stick. I sliced this apples n arrange them in a + shape in the cream custard. In between these apples, I toasted some almonds n sprinkle them over the ‘space’ between the apples. Then I top with a little cinnamon powder over the apples. But…there’s a pblm. Wat am I to do with the centre/ there’s a white space there n I can’t leave it like that. So I used the remaining sliced apples n formed a rose in the centre. Wella!

It looked nice n I was really proud of it coz I did it like juz before the guests arrived. So it was done on the spot n I had to use my creativity which I never knew I had until juz now.
The dessert tasted good n it looked good too! Wah..i’ve fallen in love in making desserts now. It happened also in class on tue. A sense of achievement for me.

I really hope I can secure a full time job here once I complete my course. It’s a good environment for my kinda work n I’m respected for wat I’ve done. Auntie margaret said that next time I’ve to autograph her apron . hahahha…no need to be famous to do this. I’m contented juz to be able to make this my career. I spend more time in the kitchen than anywhere else. In fact the hrs I spend in the kitchen are at least double the hours I sleep n it’s from commercial to domestic kitchen.

This is only the beginning. More challenges ahead of me n I believe I’ll be able to confront each of them successfully. Hey, if laurel can do that, so can u!
