Today we were very relaxed in class. Finished up the chilled cheesecake n with the genoise sponge we had, we made whipped cream mixed with malibu liquor n coffee powder in replacement for mascarpone cheese used in tiramisu.

I realized that I enjoy slicing the layers of cake horizontally n spreading the cream in n outoutside of the cake. Even the chef also said that. The filling was very nice but too bad we didn’t have enuff cream so cldn’t whip anymore fresh cream. Anyway, my frens who had digital camera took pics of me with my cake. I’ll fwd it to u all once they send to me via email.

Today’s officially the last lesson. Next Monday we’ll be having revision followed by some demo by he chef. Tue n wed will be the exams.

The theory bit bores me to tell ya the truth. But it is essential to know it well not juz for the exams.
Juz now I went down to the bakehouse near my place n asked them if they needed part time helpers. They’ll get back to me as I was told. Hopefully I can get a job there coz it’s near my place. Juz gotta walk down 10-15mins. I juz need the experience.

Time flies. I’ve completed the basic patisserie. Intermediate will be diffcult as we were warned. The chef in intermediate class is very strict. He’ll juz tell us to prepare the puff on our own n then do his demo, leave us to complete our product.

Oh, yesterday I fried some dumplings n brought them to sch for lunch, I didn’t get to eat them coz my frens finished it up for me. they all wanted to know the recipe n how I made my dumpling wrapper. They were shocked when I told them I juz use plain flour n water. They expected more I guess. But the “more” bit gotta come from the pinning of each wrapper with a small rolling pin. I’ve to conduct a class for a few of them during easter.
