we tempered the three types of choc yesterday. it's a very simple process. all we needed were the bain maries. they're used specially to melt the choc and then tempering it. that's wat they use in the industry but the sch's ones are smaller.
well, some idiots dumped chunks of milk choc into dark choc and the biggest shock came when we discovered that someone switched off the bain maries!!!! damn! tat meant the choc were all not tempered! shit!
so we had to remove the chunks of choc into their "right' bain maries. the chunks were so huge that i had to put my hand into the choc and fish out all the lumps and break them by hand. my arms are sore now i tell ya. i'm so tired. btw, i'm not talking abt 2-3 kg of choc. god knows how much choc was in there! ok, i brought home about close to 4 kg of choc.
my products weren't that nice. could have done better but was so tired after breaking the choc chunks. tmrw i've gotta work. dunno how i'm gonna survive.
am sick of choc now. think i'll abstain from it for the next few mths.
next week i'll have about 5 cakes to bring home. sigh...i really really wish all of u were here to eat it. everytime i bring my product home, i start to think who i shd give it to.
if my mum's coming in june, i'll save the choc for her. no need to put in the fridge coz it's cool here. oh, in another 10 days. if sg has no new SARS cases, then the situation is said to be under control. think it'll be fine. singapore win this battle.
