ok another new chef. this guy's name is Andre. just like my idol, andre agassi. hehe...
andre's pretty young n he's fun, casual n approachable. we did our misen place today n for tmrw just gotta put everything together. we might even have the time to make lemon tarts, one of my favourite tarts.
we made short paste for the mini tarts. once again, these are all served durinng cocktail functions. andre taught us another method to do the short paste but iwe didn't like his method. see, with new chefs, we know different methods n we can choose the method that we prefer to work with. at least there's a choice n we know there's another method.
i enjoy working with reiko. we seem to work very well together. she's one person whom i'll love to work in a commercial kitchen. we knew wat we had to do n we'll help each other out. no offence to my previous two partners. i enjoyed working with them too just that reiko's the outstanding one.
it's no good for me to stand opposite hai dang n sondra in class. we go cranky. i'm half insane. pretty sure will be 75% insane by the end of the course.
oh, the chef said that it's his first time teaching superior class for two days in a row so he's not that familiar with some of the stuff. he also said that he learnt two things from us:
1) to melt choc in a plastic bag in the microwave
2) whenever we used the machine to pin out our short pastry n puff pastry dough, we'll put our name tags on top of the microwave as a form of a queue. he thought that was a brilliant idea. well, we told him we did that coz we had no choice. of coz man!!! kendryx is now back in our class so we die die also must do that.
